It is common to see people selling items like jewlry, glyphs and other crafted items atprices that are tems times lower than what it takes for them to make them.
You are probably right to say that if you sell them more expensive, your items will remain unsold since everyone is selling it so cheaply.
If you can, do not sell.
If prices are so low on your products that you will be selling them at a loss, or not be able to sell them at all, then the answer is obvious. Don't try to sell them! There are other ways to make money with these items.
All your uncommon or green items can be disenchanted. After disenchanted, your rings, weapons, armor, and some other items can turn into dusts and shards. Dusts and shards are free to put up for sale. There is no risk for you to sell them as you do not need to pay any fees if your enchanting materials are not sold. Thus you can avoid undercutting the other prices.
If you don't have a character with enchanting as a profession, you can probably find somebody in your guild to help you, or you can ask on trade and pay a tip to the enchanter who helps you.
Level up a crafting profession can be quite costly but do not make it harder for yourself than you have to. While you are leveling up, use your items in a creative way to earn gold and don't undercut prices.
